Popeye's Louisiana Kitchen Plans October Opening

Having passed through the planning commission and city council, Popeye's has the green light to begin their project.

The latest word on Popeye's Louisiana Kitchen in Eden Prairie is that it will open in October.

Although Popeye's will not add on to the 2,000 square foot former KFC building at 7995 Glen Lane, substantial renovations to the exterior of the building placed the project on the city's planning desk.

Having passed through the planning commission and city council, Popeye's has the green light to begin their project. At the July 16 city council meeting, Popeye's representatives told the council their intentions to open the store by late October.

In January, Eden Prairie Patch reported that KFC was closed. Popeye's Louisiana Kitchen confirmed it would take over the location.

Popeye's, the second largest fried chicken chain in the country, acquired 14 bankrupt francise KFC locations in Minnesota this past November, despite KFC's attempts to keep them under its brand. A bankruptcy judge cleared the sale of the locations, even though KFC itself backed a higher bid for the Twin Cities restaurants.
