New Bakery: Fred's Bread in Eden Prairie

Specialties at Fred's Bread include hodge podge bread, cinnamon rolls, travel cakes, oatmeal bread and Kalamata olive bread.

One of the world's most unbeatable smells is fresh-baked bread. Fred Mische and Mandy Chowen, owners of Fred's Bread in Eden Prairie, get to wake up to the smell every morning.  

Fred's Bread is located at 6872 Washington Avenue South, Suite 140 in Eden Prairie. Mische and Chowen's wholesale business opened in January, and in March they add a retail portion of their business.

They describe the business as an artisan bakery producing products for the wholesale food industry, corporate events, business meetings and for retail consumption. They offer a unique selection of long pre-fermented artisan breads, rustic pastries and dessert tarts.

Everything at the bakery is made from scratch using only quality top shelf ingredients, from incredible flours, to European Quality butter to superb ganache.

"We strive to use local grown or produced ingredients as much as possible," Mische said.

Fred's Bread products are created with artisan techniques still used today in Europe's bakeries. "The ingredients are simple. The flavors exceptional. Each product has passed rigorous taste tests (tough job). Some don't make the cut. Those that do will leave you wanting more."

Mische said "leave you wanting more" is actually a taste test criteria at Fred's Bread.

Mische insists that each of his breads has its own separate poolish (long dough fermentation) formula. Each loaf must be hand shaped before it is baked in a steam-injected stone hearth oven. Chowen demands that her ingredients highlight the flavor and seasonality of her pastries.

"Neither of us believe in short cuts," Mische said.

Mische said they chose a location in Eden Prairie because of highway accessibility to operate their wholesale business quickly through the western and southwestern suburbs. "It also feels as though there is a positive business environment." 

Specialties

• Hodge Podge Bread that contain Raisins, Walnuts, Craisins, Pecans, Poppy Seeds and Sesame Seeds with no added sugar.

• Cinnamon Rolls with a light touch of Coarse Ground Whole Wheat used for a depth of flavor that is lacking in competitors pastries.

• Travel Cakes that highlight the cake’s flavor not the frosting.

• Flax and Oatmeal bread which makes for a terrific sandwich.

• Kalamata Olive bread that is terrific for a Friday evening happy hour with wine and meats and cheeses.

Retail Hours are Tuesday through Friday 7 a.m. to 1 p.m.

Wholesale Hours are Monday through Friday 5 a.m. to 5 p.m.
